Finally got to spend a night at home last night.
It's been a crazy, crazy week. What with the contest setup at work, and the extra hours necessary to baby it along, plus all the prep for Con-Version next week, and all the fun stuff going on around town that we simply couldn't miss, Lisa and I haven't slumped on the couch since I don't know when.
So I called Lisa on the phone and nudged her gently into going out and picking up the ingredients for Phil's Famous Chicken Nachos that we didn't currently have, then got home while she was out and got everything ready. Cooked everything up and the two of us got to sit down and watch the digitally remastered edition of Ghostbusters.
Oh, heaven.
I love cooking. I've finally got to the point in my kitchen knowledge where I can make a relatively palatable dinner out of odds and ends. Even without a recipe to guide me!
I'm particularly proud of my Chicken Nachos. Made up the recipe all by myself. Never comes out the same way twice and quite often leaves my sensitive tummy suffering from terminal heartburn, but it's yummy.

Ingredients: 3-4 boneless chicken breasts, crushed dried chili peppers (or chili powder, if you don't have the peppers), Frank's Red Hot sauce, Tabasco sauce, Worcestershire sauce, sliced jalapeno peppers (the kind in a jar. I like these cause the juice they are sitting in gives you something to simmer the chicken in), round tortilla chips, old cheddar cheese.
Preparation: Cut the chicken up real small. Heat up a layer of oil in a fry pan to the searing level. Dump in the crushed peppers (or chili powder if you don't have any peppers) and let them cook for a few seconds. Chuck in the chicken and sear it on all sides. Coat with Frank's, and add several dashes of Worcestershire sauce and Tabasco. Add some jalapenos and some of the juice. Simmer until the liquid is boiled away. Spread out over a layer of chips on a baking tray and cover with mounds of cheese. Bake at 350 until the cheese just melted. Eat with sour cream (salsa usually unnecessary).
Oh, baby! Now I'm hungry again.
And it'll probably be McDonald's for dinner.
